As an ice cream connoisseur, I have always enjoyed going to my local ice cream shop and getting a scoop or three. After going paleo though, my ice cream intake was almost nonexistent. Even as a cheat food, I didn't want to fuel myself with chemicals I couldn't pronounce, reduced fat milk, and copious amounts of sugar.
One day, I stumbled upon Matt Stone's now famous blog post comparing ice cream to breast milk. Obviously, one would never want to replace breast milk with ice cream when feeding an infant, but it really got me thinking about the nutrition profile of both foods.
I researched ice cream further, and found that other health experts were not as opposed to the food as I would have thought. Nutritional consultant and physique and strength coach John Kiefer advocates ice cream consumption for his highly regarded Carb Backloading program, and bio-hacker David Asprey believes that ice cream can be a health food if the ingredients are unrefined and nutrient dense.
With my mind reopened to ice cream, I started testing out different ways to make ice cream healthier than the store bought crap I used to eat. I found that the chemicals could be replaced with egg yolks, milk could be replaced with coconut milk, and sugar could be replaced with smaller amounts of honey. The results were fantastic, tasting even better than the ice cream I got at the local grocery store!
